The tray isn't flat. I sometimes bake large sheet pans, and they wobble on the serving platter because the baking tray is concave. If you were to bake cookies and try to brush them with egg yolk, it would run off one side. Honestly, it seems like Smeg doesn't know anything about baking, and that surprises me. But I checked: Smeg doesn't offer a baking tray for this model.
