At my old barbecue I ran every 4-5 minutes to check and turn the meat. Actually, I was constantly busy. With a bastard it is much quieter. A bastard heats the meat all around, because it is an oven. Set the temperature according to the recipe and use the specified time, turn the meat after half the time. Then use a core temperature meter and as soon as the set temperature is reached, the thermometer will beep and your meat is really perfect.
